A definite comfort food, this chicken and rice is quick and easy to make and is a crowd pleaser. You can choose to serve your chicken on top of rice or mixed into the dish...here, I have mixed the chicken into the rice dish which allows the servings to be stretched a bit.
Chicken and Rice
3 boneless, skinless chicken breast
Teriyaki Marinade for Chicken
3 Cups Instant Rice (Minute Rice)
1 Medium Red Onion, chopped
3/4 cup Red Bell Pepper, chopped
3/4 Cup Green Bell Pepper, chopped
1 Clove Garlic, chopped
1-2 Tbsp Olive Oil
1/4 Cup Soy Sauce
1/2 Cup Teriyaki Sauce
1/2 cup Pineapple Juice
1/2 Cup Pineapple, chopped
Marinade chicken in Teriaki sauce for 2 hours or overnight. Grill chicken and set aside. Chicken can be cubed or sliced for serving. Prepare rice according to package direction. Saute onion and peppers in olive oil, until onions are translucent...add garlic in the last couple minutes of cooking time. Mix cooked rice, onion/pepper/garlic mixture, soy sauce, teriyaki sauce, pineapple juice and chopped pineapple juice together. Add chicken and serve. Approx 6-8 servings.
