Tex Mex Stew
1.5 lb ground chuck
1 cup rough chopped green and red bell pepper
1 15 oz can black beans, drained
1 4 oz can green chilies
1 11oz can corn nibblets, drained
1/4 tsp cayenne pepper
1 packet onion soup mix
2 1/4 cup water
1 Tbsp ground Cumin
1/2 tsp dried Oregano
1/2 tsp salt
In large dutch oven or stock pot, brown and drain ground chuck. Add peppers, beans, corn, chilies, soup mix, 2 cups water, cumin, salt, oregano and cayenne. Simmer for 45 minutes. Stir in 1/4 cup water mixed with 2 Tbsp flour and add to your pot. Simmer additional 15 minutes. Serve with tortilla chips and top with cheese, green onions and/or sour creme.
