Chicken and Rice

For an easy dish on a busy weeknight, this Chicken and Rice made with the help of Mr. Crockpot, fits the bill.
Chicken and Rice

3-4 boneless chicken breast
1 can Mushroom Soup
1/4 cup chopped mushrooms (optional)
1/2 package Onion Soup mix
2 cups rice
1/4 tsp pepper

Place chicken breast in crockpot with approx 3 cups water. Cook on high for about 2 1/2 hours. Remove chicken from broth and chop or tear into pieces. Place chicken and remaining ingredients back into broth. Add additional water if needed to ensure that broth is not too thick. Cook on high for another hour. Serve and enjoy.

Oreo Truffles
1 pkg cream cheese, softened
1 pkg Oreo Cookies, crushed
Chocolate or Vanilla bark
Crush cookies into fine crumbs. Use mixer or hand to cream the softened cream cheese and stir in cookie crumbs (best done by hand). Roll into 1 inch balls and place on parchment lined baking sheet. Chill or freeze cookie balls to prepare for dipping. Dip cookie balls in melted chocolate. Drizzle with additional chocolate or sprinkle with cookie crumbs or candy sprinkles for decoration.
