This week, I am posting a breakfast casserole that is fast and delicious. This casserole is a smaller portion than is normally seen where 8-12 eggs are needed...this recipe only calls for 3 eggs and would be the perfect size for 2-4 people.
Breakfast/Brunch Casserole
3 slices bread
1/2 cup shredded cheddar cheese
6-8 slices bacon, cooked and crumbled
3 eggs
1 cup milk
1/2 tsp ground mustard
1/4 tsp salt
1/8 tsp pepper
Remove the crust from the bread slices and cube into 1 inch pieces. Spread bread in the bottom of a greased 8 inch square baking dish.
Cook bacon. Crumble bacon and sprinkle over bread cubes, along with cheese.
In a bowl, whisk eggs, milk, mustard, salt and pepper. Pour over the bacon and cheese. Bake in a preheated oven at 350 degrees for 30 minutes or until puffed and golden.
Makes 2-4 servings. Choice of meat can be substitued ....cook, drain and crumble 1/2 pound bulk pork sausage or add 1/2 cup cubed ham.

Anita, this looks yummy and easy to make. I want to do a Valentine breakfast and I have a heart ceramic pie plate. There are only three of us. Do you think this plate would be doable? Joan
Hi Joan - If the pie plate is 9 inch, which I'm guessing it is, it would probably work, but your casserole would be more spread out and would come out thinner and not as fluffy. You could increase the recipe a bit, another egg, another slice of bread and increase by 1/3 cup milk and a little extra cheese, salt,pepper, ground mustard. Another suggestion would be to use three oven proof mugs and divide the bread and mixture between the three and bake. Hope you enjoy.

This use to be a tradition for our X-mas breakfast every year when my Grandparents where with us......I made it this past X-mas and my Kids loved it!!~ My recipe is pretty much exact.....I posted a home tour if you are interested.
